An Elf's Work is Never Done

     Well I've been as busy as a little elf today, running errands, picking up last minute gifts, and helping a few friends in need.  I even managed to make some super cute goodies for Monkey's teachers at daycare and the dance studio, and of course I have to share!

 
     Aren't these little sleighs the cutest?  I found the idea on Pinterest, of course, and they were so simple to make it took me maybe an hour to put them all together.

Here's what you'll need:



3 big bags of assorted mini Hershey's bars
3 dozen candy canes (any flavor you choose)
3 packs of 6 Kit-Kats
Hot glue gun
Ribbon

Simply assemble your "sleigh" using 10 mini bars, one Kit-Kat, and 2 candy canes.


Add a bit of hot glue to hold it all together, then wrap with some pretty ribbon or top with a cute bow, and...

Voila!
     Monkey's dance teachers thought they were precious, and we'll be handing out a few more tomorrow at daycare.  I got 18 sleighs out of my supplies, and now I have a few leftovers.  I have a super fun idea for the extras, but that can wait until tomorrow.  In the meantime, I was to share a recipe I tried last night that was so yummy!



Chicken Piccata
Makes four servings

2 boneless, skinless chicken breasts (cut in half lengthwise, to form 4 thin cutlets)
1 cup Italian style bread crumbs
1 egg, beaten
6 TBS butter
1/4 cup lemon juice
1 cup chicken stock
1/4 cup capers
1/4 cup fresh parsley, chopped  (I'm just now noticing I forgot the parsley; oh well!)
8 ounces angel hair pasta
2 TBS butter
1/2 cup grated Parmesan cheese


Pour the bread crumbs in a shallow dish. Pour the beaten egg in a seperate shallow dish. Take one chicken cutlet, and it dredge in the egg and then in the breadcrumbs. Shake off any excess breadcrumbs and place on a plate. Repeat with all cutlets.  In a large skillet, melt 2 tablespoons of butter over medium-high heat. Place two of the coated chicken cutlets into the skillet. Cook on each side, for 2-4 minutes each side. Once thoroughly cooked, place on a plate and tent with foil to keep warm.  Repeat with remaining butter and chicken, set aside.  Pour the lemon juice, chicken stock, and capers into the warm skillet. Stir and scrape up any of the loose brown bits. Bring to a boil. Reduce heat slightly and let sauce simmer for 5 minutes.  Meanwhile, cook angel hair pasta according to package directions. Drain water and add 2 Tablespoons butter to pasta and 1/2 cup freshly grated parmesan cheese.  Serve chicken with sauce and pasta. Garnish with fresh parsley and more grated Parmesan cheese, if desired.

Happy Anniversary, Baby!

   Four years ago today I married the man I loved.  Although my love for him then was as fierce as I could manage, it's a mere shadow of what I feel for him today.  After four years of marriage, not only is he the man I love above all others; he's the man I share a life with, a home with, a child with, and a story with.  He's the first one I want to call when I have some funny story to tell.  He's the first one I run to when there's a crisis.  He's the one that can make me smile, make me laugh, and bring me to tears with just a look.  Even when he's far away, he's still the voice in my head encouraging me to be a better me, to go after that goal, and to believe in myself.  I am so grateful for these past four years, and I can't wait to see what the next 50-60 hold.

    In addition to our anniversary today, Monday is J's birthday, so I wanted to make sure I sent off a care package with enough goodies to spoil him for both occasions.  That's why I was so excited when I found Cake in a Jar!


All you need is 4 Pint-sized jars and the cake mix of your choice.  Prepare your cake batter.  Spray the inside of your jars with cooking spray.  Then fill the jars up about 3/4 of the way with the batter.  Place them on a cookie sheet and bake for the time required in your recipe, or until a toothpick inserted into the middle of the cake comes away clean.  (You may have to adjust the time slightly.)  When it's cooked, remove from oven and carefully screw the tops on tightly.  You'll hear them pop as they seal.  Voila!  Cake in a Jar lasts up to 6 months!  I sent 4 jars of red velvet cake to my hubby with a can of store-bought cream cheese icing.  He can either share or hoard them for later :-)

   In his care package I also included a little photo collage Monkey put together:




And I packed a bag of my Homemade Granola in there along with a few essentials such as razors, vitamins, etc.  I haven't heard whether or not he's received it, but considering I sent it at the end of July, here's hoping.

Father's Day Idea



Isn't this the cutest Father's Day card ever?  My sister was a genius to suggest we make use of the local beaches, her minor in photography, and my daughter's modeling aspirations!  Plus, (with the help of Shutterfly) I was able to make this perfect keepsake for my husband.  The best part is it's small enough that he can tote it around with him while on deployment.  I'm sure it will be a big hit.  Also, we were able to make "Pawpaw" cards by having my daughter and godson spell out "I <3 U".  Now I just have to keep my husband and stepdaddy away from my blog until after Father's Day.


Also, since my husband is an avid coffee-drinker, I couldn't resist making a personalized mug, especially since it spells out "D-A-D" in such a cute manner.  I think I may have to go back and make a cute mug for me too. :-)
